  1. Cut the beef into 2-3 cm cubes and pat dry with paper towels; chop the onions.
  2. In a large heavy-bottomed pot, melt butter over medium-high heat and brown the beef cubes in batches until nicely seared on all sides, then remove.
  3. Add onions to the same pot and sauté until softened and translucent, about 5-7 minutes.
  4. Sprinkle flour over the onions and stir for 1 minute to create a roux.
  5. Return the beef to the pot, then pour in beef broth and water, stirring well to combine.
