👨‍🍳 Instructions

  1. Heat oil in a large pot or Dutch oven over medium-high heat. Add diced pork shoulder and sear until browned on all sides, then remove and set aside.
  2. Add chopped onion and diced carrots to the same pot, sautéing until softened, about 5-7 minutes.
  3. Return the pork to the pot. Add drained sauerkraut, diced potatoes, bay leaf, allspice berries, smoked paprika, and black pepper.
  4. Pour in enough water to cover all ingredients. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until pork is very tender and vegetables are cooked through.
  5. Remove bay leaf and allspice berries before serving. Ladle the Kapusniak into bowls, optionally garnished with fresh dill or a dollop of sour cream.
