👨🍳 Instructions
- Heat oil in a large pot or Dutch oven over medium-high heat. Add diced pork shoulder and sear until browned on all sides, then remove and set aside.
- Add chopped onion and diced carrots to the same pot, sautéing until softened, about 5-7 minutes.
- Return the pork to the pot. Add drained sauerkraut, diced potatoes, bay leaf, allspice berries, smoked paprika, and black pepper.
- Pour in enough water to cover all ingredients. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until pork is very tender and vegetables are cooked through.
- Remove bay leaf and allspice berries before serving. Ladle the Kapusniak into bowls, optionally garnished with fresh dill or a dollop of sour cream.
