👨‍🍳 Instructions

  1. Prepare the green bananas: Peel the green bananas and cut them into 2-inch chunks, then place them immediately in a bowl of water to prevent browning.
  2. Sear the beef: Heat vegetable oil in a large pot, add beef chunks, and brown them on all sides. Remove the beef and set aside.
  3. Sauté aromatics: Add chopped onion to the same pot and cook until softened, then add minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Build the sauce: Stir in chopped tomatoes and curry powder, cooking until the tomatoes break down and form a thick sauce.
  5. Combine and simmer: Return the beef to the pot, add the green banana chunks, and pour in beef broth (or water) until everything is just covered. Season with salt.
  6. Cook until tender: Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until the beef and bananas are very tender and the sauce has thickened.
  7. Serve: Stir gently, adjust seasoning if needed, and serve hot, optionally garnished with fresh coriander or parsley.
