- Beef fillet 170 g · 221 kcal
- Olive oil 15 g · 130 kcal
- Onion (for marinade) 5 g · 2 kcal
- Lemon juice 10 g · 3 kcal
- Saffron threads 0 g · 0 kcal
👨🍳 Instructions
- Thinly slice the beef fillet against the grain into long, flat pieces, about 0.5 cm thick. Pound lightly if needed to achieve an even thickness.
- In a bowl, combine the beef slices with finely grated onion (or just its juice), olive oil, bloomed saffron (saffron soaked in a tablespoon of hot water), and a pinch of salt and black pepper.
- Mix well to ensure all meat is coated, then cover and refrigerate for at least 4 hours, or preferably overnight, for the flavors to meld.
- Preheat your grill or broiler to medium-high heat. Thread the marinated beef slices onto skewers, folding them accordion-style if they are very long, ensuring they are tightly packed.
- Grill the kebabs for about 3-5 minutes per side, turning occasionally, until they are beautifully charred on the outside and cooked to your desired doneness inside. Be careful not to overcook them.
- Serve immediately, typically with saffron rice (chelow), grilled tomatoes, raw onions, and a sprinkle of sumac.
