  1. Thinly slice the beef fillet against the grain into long, flat pieces, about 0.5 cm thick. Pound lightly if needed to achieve an even thickness.
  2. In a bowl, combine the beef slices with finely grated onion (or just its juice), olive oil, bloomed saffron (saffron soaked in a tablespoon of hot water), and a pinch of salt and black pepper.
  3. Mix well to ensure all meat is coated, then cover and refrigerate for at least 4 hours, or preferably overnight, for the flavors to meld.
  4. Preheat your grill or broiler to medium-high heat. Thread the marinated beef slices onto skewers, folding them accordion-style if they are very long, ensuring they are tightly packed.
