👨‍🍳 Instructions

  1. Slice the kielbasa into ½-inch thick rounds; chop the onion, carrots, and potatoes into bite-sized pieces; shred the cabbage, and mince the garlic.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add kielbasa and cook until lightly browned, then remove and set aside.
  3. In the same pot, add onions, carrots, and a pinch of salt; sauté for 5-7 minutes until softened. Stir in garlic and smoked paprika, cooking for another minute until fragrant.
  4. Add potatoes, diced tomatoes, bay leaf, and chicken broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until potatoes are almost tender.
  5. Stir in the shredded cabbage and the cooked kielbasa. Continue to simmer for another 15-20 minutes, or until the cabbage is tender and the flavors have melded.
  6. Remove the bay leaf, taste and adjust seasonings as needed. Serve hot, garnished with fresh chopped parsley.
