  1. Cut the lamb shoulder into large, rustic chunks and place them in a spacious bowl. Season generously with salt, black pepper, dried oregano, and fresh rosemary leaves, then add olive oil and lemon juice.
  2. Massage the lamb mixture thoroughly to ensure all pieces are well coated with the seasonings. Let it marinate for at least 30 minutes at room temperature, or ideally, for a few hours in the refrigerator.
