👨‍🍳 Instructions

  1. In a bowl, combine ground lamb with half of the minced onion, garlic, chopped parsley, cumin, coriander, paprika, salt, and black pepper. Mix well and form into small meatballs.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the kofta on all sides, then remove and set aside.
  3. Add the remaining onion and garlic to the pot and sauté until softened, about 5-7 minutes.
  4. Stir in the tomato paste and cook for 1 minute, then add crushed tomatoes, vegetable broth, diced potatoes, and carrots. Bring to a simmer.
  5. Return the kofta to the pot, reduce heat to low, cover, and simmer for 30-40 minutes, or until vegetables are tender and kofta are cooked through.
  6. Garnish with fresh parsley before serving.
