- Ground Lamb (lean) 150 g · 380 kcal
- Yellow Onion 75 g · 30 kcal

- Canned Crushed Tomatoes 150 g · 30 kcal

👨🍳 Instructions
- In a bowl, combine ground lamb with half of the minced onion, garlic, chopped parsley, cumin, coriander, paprika, salt, and black pepper. Mix well and form into small meatballs.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the kofta on all sides, then remove and set aside.
- Add the remaining onion and garlic to the pot and sauté until softened, about 5-7 minutes.
- Stir in the tomato paste and cook for 1 minute, then add crushed tomatoes, vegetable broth, diced potatoes, and carrots. Bring to a simmer.
- Return the kofta to the pot, reduce heat to low, cover, and simmer for 30-40 minutes, or until vegetables are tender and kofta are cooked through.
- Garnish with fresh parsley before serving.
