👨🍳 Instructions
- Prepare the noodles: If using fresh laghman noodles, boil them until al dente, rinse under cold water to prevent sticking, and lightly oil. Set aside.
- Sear the meat: Heat vegetable oil in a large wok or pot over high heat. Add diced beef and sear until browned on all sides. Remove meat and set aside.
- Sauté aromatics: Add sliced onions to the same pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
- Add vegetables: Incorporate diced carrots, bell peppers, and celery. Stir-fry for 5-7 minutes until slightly tender-crisp.
- Build the sauce: Stir in tomato paste, cumin powder, coriander powder, and black pepper. Cook for 2 minutes, then add diced tomatoes and enough water or broth to cover the vegetables and meat (return meat to the pot).
- Simmer the stew: Bring to a boil, then reduce heat, cover, and simmer for 45-60 minutes, or until the beef is tender. Season with salt to taste.
- Combine and serve: Divide the cooked noodles among serving bowls. Ladle the hot meat and vegetable stew over the noodles.
- Garnish: Sprinkle generously with fresh cilantro or dill before serving. Serve immediately.
