👨‍🍳 Instructions

  1. Combine flour, water, yeast, olive oil, and about 0.5g of salt in a bowl. Knead the dough until smooth and elastic, then cover it and let it rise in a warm place for about 1 hour.
  2. Finely chop tomatoes, red bell pepper, onion, garlic, and fresh parsley. In a separate bowl, mix these chopped vegetables with minced lamb, tomato paste, red pepper paste, ground cumin, ground paprika, and about 0.5g of salt until well combined.
  3. Preheat your oven to its highest setting (around 250°C/480°F) with a pizza stone or baking sheet inside to get it very hot.
  4. Take a portion of the risen dough and roll it out very thinly into a round or oval shape. For this recipe, we're making one Lahmacun, so roll out the entire prepared dough.
  5. Evenly spread a thin layer of the prepared meat mixture over the rolled-out dough, leaving a small border around the edges.
  6. Carefully transfer the Lahmacun to the hot oven stone/baking sheet and bake for 6-10 minutes, or until the edges are crispy and the meat is cooked through.
  7. Remove from the oven, optionally garnish with fresh parsley and a squeeze of lemon juice, and serve immediately, often rolled up with additional fresh vegetables.
