👨‍🍳 Instructions

  1. Mince shallots, garlic, and ginger into a fine paste. In a bowl, combine the paste with coriander powder, cumin powder, half of the sweet soy sauce, and lime juice.
  2. Cut the lamb into 1-inch cubes and add to the marinade. Mix well to coat all pieces, then cover and refrigerate for at least 2 hours, or preferably overnight.
  3. Thread the marinated lamb onto soaked wooden skewers. Preheat a grill to medium-high heat.
  4. Brush the skewers lightly with vegetable oil and grill for 10-15 minutes, turning occasionally, until the lamb is cooked through and lightly charred. Baste with the remaining sweet soy sauce during the last few minutes of grilling.
  5. Serve Sate Kambing hot, optionally with sliced raw shallots, bird's eye chilies, and a squeeze of fresh lime.
