👨‍🍳 Instructions

  1. Cut the beef into 2-3 cm cubes. Dice potatoes, carrots, and rutabaga into similar-sized pieces, and slice the leek.
  2. Brown the beef cubes in a large pot or Dutch oven over medium-high heat. Remove the browned meat and set aside.
  3. Add the diced potatoes, carrots, rutabaga, and sliced leek to the pot. Sauté for about 5-7 minutes until slightly softened.
  4. Return the browned beef to the pot, then pour in the beef broth. Bring to a boil, then reduce heat, cover, and simmer for 90-120 minutes.
  5. The vegetables should be very tender, and some may break down, thickening the stew. Season with salt and pepper to taste.
