👨‍🍳 Instructions

  1. Soak glutinous rice in water for at least 4 hours, or preferably overnight, then drain well.
  2. Clean the bamboo tubes thoroughly and line their interiors with banana leaves, ensuring no gaps.
  3. Combine the drained glutinous rice with coconut milk and salt in a bowl, mixing until well incorporated.
  4. Carefully fill each banana leaf-lined bamboo tube with the rice mixture, leaving about 2-3 cm from the top.
  5. Pour a little extra coconut milk over the top of the rice in each tube, then seal the opening with more banana leaf.
  6. Place the bamboo tubes upright or slightly tilted against an open fire, rotating them occasionally to ensure even cooking for 4-8 hours until the rice is tender.
  7. Once cooked, remove the bamboo from the fire, cool slightly, then carefully split the bamboo to extract the lemang, which can be sliced into discs and served.
