Lemon Chicken (Italian Style)

- Pound chicken breasts to an even thickness (about 1/2 inch), then season them generously with salt and black pepper on both sides. Dredge each chicken piece lightly in all-purpose flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
- Reduce the heat to medium. Add butter to the same skillet, letting it melt. Then add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan with a wooden spoon. Bring the sauce to a gentle simmer and let it reduce slightly for 2-3 minutes.
- Return the cooked chicken to the skillet, spooning the sauce over it to coat. Stir in the lemon zest and fresh parsley. Gently simmer for another minute to heat the chicken through and allow flavors to meld.
- Serve immediately with your favorite side dishes, such as pasta, rice, or roasted vegetables. Garnish with extra fresh parsley or lemon slices, if desired.
