👨🍳 Instructions
- Slice the boneless, skinless chicken thighs into thinner, even pieces to ensure quick and uniform cooking.
- Finely chop the white part of the lemongrass stalks, shallots, garlic cloves, and bird's eye chili.
- In a bowl, combine the chopped aromatics with fish sauce, soy sauce, brown sugar, vegetable oil, and lime juice to create the marinade.
- Add the sliced chicken to the marinade, ensuring each piece is thoroughly coated; marinate for at least 30 minutes at room temperature, or ideally 2-4 hours in the refrigerator for deeper flavor.
- Preheat your grill or grill pan to medium-high heat and lightly oil the grates to prevent sticking.
- Place the marinated chicken pieces on the hot grill; cook for 4-6 minutes per side, or until they are cooked through and have beautiful char marks.
- Remove the chicken from the grill, let it rest for a few minutes to retain its juices, then serve hot, optionally garnished with fresh herbs.
