Lomo Saltado

- Beef Sirloin (or Tenderloin) 120 g · 288 kcal
- Potatoes (for French fries) 170 g · 296 kcal
- Cooked White Rice 120 g · 156 kcal
- Red Onion 50 g · 20 kcal
- Tomatoes 100 g · 18 kcal
- Aji Amarillo Paste 10 g · 10 kcal
- Garlic 5 g · 7 kcal
- Soy Sauce 20 g · 15 kcal
- Red Wine Vinegar 10 g · 3 kcal
- Fresh Cilantro 5 g · 1 kcal

👨🍳 Instructions
- Cut beef sirloin into thin strips and season with salt and pepper. Slice red onion into thick strips and tomatoes into wedges; mince garlic and chop cilantro.
- In a large skillet or wok, heat a portion of vegetable oil over high heat until smoking. Sear the beef strips in batches until browned, then remove from the pan.
- Add the red onion and garlic to the same pan and stir-fry for 1-2 minutes until slightly softened. Add the tomatoes and Aji Amarillo paste, stir-fry for another minute.
- Return the beef to the pan. Add soy sauce and red wine vinegar, stirring quickly to combine all ingredients and create a rich sauce.
- Add the freshly cooked French fries to the pan and gently toss to coat them in the sauce. Stir in the chopped fresh cilantro.
- Serve immediately alongside the cooked white rice, ensuring each plate gets a good portion of beef, vegetables, and fries.
