👨‍🍳 Instructions

  1. Cut beef sirloin into thin strips and season with salt and pepper. Slice red onion into thick strips and tomatoes into wedges; mince garlic and chop cilantro.
  2. In a large skillet or wok, heat a portion of vegetable oil over high heat until smoking. Sear the beef strips in batches until browned, then remove from the pan.
  3. Add the red onion and garlic to the same pan and stir-fry for 1-2 minutes until slightly softened. Add the tomatoes and Aji Amarillo paste, stir-fry for another minute.
  4. Return the beef to the pan. Add soy sauce and red wine vinegar, stirring quickly to combine all ingredients and create a rich sauce.
  5. Add the freshly cooked French fries to the pan and gently toss to coat them in the sauce. Stir in the chopped fresh cilantro.
  6. Serve immediately alongside the cooked white rice, ensuring each plate gets a good portion of beef, vegetables, and fries.
