👨‍🍳 Instructions

  1. Prepare the short rice noodles according to package instructions, usually by blanching or soaking; drain well.
  2. In a small bowl, whisk together fish sauce, soy sauce, oyster sauce, dark soy sauce, and sugar to create the stir-fry sauce.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic and shallots, stir-fry until fragrant.
  4. Add the thinly sliced beef and stir-fry until cooked through and lightly browned; push the beef to one side of the wok.
  5. Crack the egg into the empty side of the wok, scramble it quickly, then mix it into the beef.
  6. Add the prepared rice noodles, bean sprouts, and Chinese chives to the wok.
  7. Pour the stir-fry sauce over the ingredients and toss everything together vigorously for 2-3 minutes until well combined and heated through.
  8. Serve immediately, optionally garnished with pickled green papaya or cucumber and a side of chili garlic sauce.
