Lort Cha (Cambodian Stir-fried Short Rice Noodles)

- Fresh short rice noodles 200 g · 260 kcal
- Beef sirloin, thinly sliced 100 g · 200 kcal

👨🍳 Instructions
- Prepare the short rice noodles according to package instructions, usually by blanching or soaking; drain well.
- In a small bowl, whisk together fish sauce, soy sauce, oyster sauce, dark soy sauce, and sugar to create the stir-fry sauce.
- Heat vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic and shallots, stir-fry until fragrant.
- Add the thinly sliced beef and stir-fry until cooked through and lightly browned; push the beef to one side of the wok.
- Crack the egg into the empty side of the wok, scramble it quickly, then mix it into the beef.
- Add the prepared rice noodles, bean sprouts, and Chinese chives to the wok.
- Pour the stir-fry sauce over the ingredients and toss everything together vigorously for 2-3 minutes until well combined and heated through.
- Serve immediately, optionally garnished with pickled green papaya or cucumber and a side of chili garlic sauce.
