👨🍳 Instructions
- Blanch the pork ribs by boiling them in water for a few minutes to remove impurities and scum; drain and rinse thoroughly under cold water.
- Peel the lotus root and cut it into thick, half-moon slices; soak them in water with a dash of vinegar to prevent browning.
- Briefly rinse red dates and goji berries; clean raw peanuts and peel the ginger before slicing it into thick pieces.
- Place the blanched pork ribs, lotus root, red dates, peanuts, and ginger slices into a large soup pot.
- Add approximately 1.8 to 2 liters of water to the pot, ensuring all ingredients are fully submerged.
- Bring the soup to a boil over high heat, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is very tender and the lotus root is soft.
- Add the goji berries during the last 15 minutes of simmering to ensure they remain plump and flavorful.
- Season the soup with salt to taste before serving hot, optionally garnished with chopped green onions.
