  1. Blanch the pork ribs by boiling them in water for a few minutes to remove impurities and scum; drain and rinse thoroughly under cold water.
  2. Peel the lotus root and cut it into thick, half-moon slices; soak them in water with a dash of vinegar to prevent browning.
  3. Briefly rinse red dates and goji berries; clean raw peanuts and peel the ginger before slicing it into thick pieces.
  4. Place the blanched pork ribs, lotus root, red dates, peanuts, and ginger slices into a large soup pot.
  5. Add approximately 1.8 to 2 liters of water to the pot, ensuring all ingredients are fully submerged.
  6. Bring the soup to a boil over high heat, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is very tender and the lotus root is soft.
  7. Add the goji berries during the last 15 minutes of simmering to ensure they remain plump and flavorful.
  8. Season the soup with salt to taste before serving hot, optionally garnished with chopped green onions.
