- Combine ground beef, uncooked rice, egg, finely minced onion, garlic, mint, and cumin in a bowl; season with salt and pepper. Mix well and form into small meatballs.
- Heat olive oil in a large pot or Dutch oven over medium heat. Sauté the chopped onion and minced garlic for 3-5 minutes until softened and fragrant.
- Add the blended or diced tomatoes to the pot, simmering for 5 minutes to reduce slightly and deepen the flavor. Pour in the beef broth and bring to a gentle boil.
- Carefully add the meatballs to the simmering broth, ensuring they are submerged. Reduce heat to low and simmer for 15-20 minutes, or until the meatballs are cooked through.
- Stir in the diced carrots, potatoes, and zucchini. Continue to simmer for another 15-20 minutes, or until the vegetables are tender.
- Season the soup with additional salt and pepper to taste. Ladle into bowls, garnish generously with fresh cilantro, and serve hot.
