👨🍳 Instructions
- To prepare the broth (jangguk), combine water, katsuobushi, soy sauce, mirin, and sugar in a pot. Bring to a simmer over medium heat for 10 minutes, then strain to remove katsuobushi flakes and chill the broth thoroughly.
- Cook buckwheat noodles according to package instructions until al dente, typically 4-5 minutes. Drain thoroughly and rinse under cold running water to remove excess starch and cool them down.
- Place the cooled noodles into a serving bowl. Pour the chilled broth over the noodles. Garnish generously with grated daikon radish, shredded nori, and finely chopped green onions. Serve immediately with a dollop of wasabi paste on the side for an optional spicy kick.
