Minestrone with Turkey

- Canned Diced Tomatoes (no sugar added) 400 g · 80 kcal

- Green Beans (fresh or frozen) 200 g · 60 kcal

- Small Pasta (e.g., ditalini, dry) 150 g · 555 kcal
- Chicken Broth (low sodium) 1500 g · 150 kcal
- Fresh Spinach 100 g · 25 kcal

👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat and set the turkey aside.
- In the same pot, add onion, carrots, and celery. Sauté for 5-7 minutes until softened, then add minced garlic and cook for another minute until fragrant.
- Stir in the diced tomatoes, zucchini, green beans, cannellini beans, and chicken broth. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 minutes.
- Add the reserved cooked turkey and dry pasta to the pot. Cook for an additional 8-10 minutes, or until the pasta is al dente, stirring occasionally.
- Remove the soup from heat. Stir in fresh spinach until wilted. Season with salt and pepper to taste.
- Ladle into bowls and serve hot, garnished with grated Parmesan cheese if desired.
