👨🍳 Instructions
- Blend fresh mint leaves, coriander leaves, green chilies, ginger paste, and garlic paste with a splash of water to form a smooth paste.
- In a bowl, combine chicken pieces with yogurt and half of the prepared mint-coriander paste; let it marinate for at least 15 minutes.
- Heat vegetable oil in a pan over medium heat, then add chopped onion and cook until golden brown.
- Stir in chopped tomato, cumin powder, coriander powder, and turmeric powder, cooking until the tomatoes soften and oil separates.
- Add the marinated chicken to the pan and cook for 5-7 minutes until sealed, then add the remaining mint-coriander paste and salt.
- Pour in water, bring to a simmer, cover, and cook for 15-20 minutes until the chicken is tender and the sauce has thickened.
- Stir in Garam Masala and lemon juice, then garnish with fresh coriander before serving hot with rice or bread.
