🛒 Ingredients
- Clams (in shell) 150 g · 40 kcal
- Dashi stock 250 g · 5 kcal
- Miso paste (gluten-free) 20 g · 40 kcal
- Green onion, chopped 10 g · 3 kcal
👨🍳 Instructions
- Clean the clams by soaking them in salted water for 30 minutes to an hour to remove sand. Drain and rinse thoroughly.
- In a pot, bring the dashi stock to a gentle simmer. Add the cleaned clams to the simmering dashi and cook until they open, discarding any that do not open.
- Remove the clams from the broth and set aside to prevent overcooking. Reduce the heat to low, ensuring the dashi is no longer boiling.
- Ladle a small amount of warm dashi into a bowl with the miso paste and stir until the miso is fully dissolved. Gently stir the dissolved miso back into the pot with the dashi.
- Return the cooked clams to the pot, briefly warming them through. Serve immediately, garnished with freshly chopped green onions.
