French Onion Soup

- Melt butter in a large heavy-bottomed pot or Dutch oven over medium-low heat. Add sliced onions and cook, stirring occasionally, for 30-40 minutes until they are deeply caramelized to a rich golden brown.
- Sprinkle in the flour and cook for 2 minutes, stirring constantly. Pour in the dry white wine and deglaze the pot, scraping up any browned bits from the bottom.
- Add beef broth, fresh thyme sprigs, bay leaf, and black pepper. Bring to a simmer, then reduce heat to low, cover, and let it gently simmer for at least 15-20 minutes to allow flavors to meld.
- Preheat your broiler. Ladle the hot soup into oven-safe crocks or bowls. Place a slice of toasted baguette on top of each serving, ensuring it's submerged slightly.
- Generously cover the baguette and surrounding soup with shredded Gruyère cheese. Broil for 3-5 minutes, or until the cheese is melted, bubbly, and golden brown.
