👨‍🍳 Instructions

  1. To prepare falafel, soak dried chickpeas overnight, then drain and rinse thoroughly. Combine chickpeas, chopped onion, garlic, parsley, cilantro, and spices (cumin, coriander, salt, pepper) in a food processor.
  2. Process the mixture until it forms a coarse, slightly pasty consistency, but not completely smooth. Form the mixture into small patties or balls. Deep-fry the falafel in hot oil until golden brown and crispy.
  3. Prepare the tahini sauce by whisking tahini with fresh lemon juice, minced garlic, and a little cold water until smooth and creamy. Season with a pinch of salt to taste.
  4. Warm the pita bread slightly, then spread a generous amount of tahini sauce inside. Fill the pita with freshly fried falafel patties.
  5. Add sliced cucumber, tomato, and red onion, along with fresh lettuce leaves. Drizzle with a little more tahini sauce if desired, then carefully roll or fold the pita to create a wrap. Serve immediately.
