  1. Cook chow mein noodles according to package directions until al dente; drain and rinse with cold water to prevent sticking, then set aside.
  2. In a small bowl, whisk together soy sauce, cornstarch, a pinch of sugar, and 2 tablespoons of water to create the sauce; set aside.
  3. Heat vegetable oil in a large wok or skillet over high heat; add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  4. Add sliced onion, bell pepper, carrots, celery, and cabbage to the wok; stir-fry for 3-5 minutes until vegetables are tender-crisp.
