👨🍳 Instructions
- In a large bowl, combine ground beef, ground pork, minced garlic, dried savory, dried thyme, ground black pepper, ground coriander, and baking soda. Add salt (approx. 5g for the whole recipe) and beef broth.
- Knead the mixture thoroughly for 5-10 minutes until it becomes sticky and uniform. This helps to develop the protein and achieve the characteristic texture.
- Cover the bowl and refrigerate the meat mixture for at least 4 hours, or preferably overnight, to allow the flavors to meld and the meat to firm up.
- Once chilled, lightly wet your hands with water and take about 40-50g of the meat mixture. Roll it into a cylindrical shape, about 7-8 cm long and 2-3 cm thick.
- Preheat a grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Place the mititei on the hot grill. Cook for about 15-20 minutes, turning frequently, until they are evenly browned on all sides and cooked through.
- Serve the Mititei hot, traditionally with mustard and a side of fresh bread or potatoes.
