👨🍳 Instructions
- Dice chicken breast into 1-inch pieces; finely chop onion, carrot, celery, garlic, and ginger. Peel and core the apple, then dice it into small pieces.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and brown them on all sides, then remove and set aside.
- In the same pot, add onion, carrot, and celery; cook for 5-7 minutes until softened. Stir in garlic and ginger, cooking for another minute until fragrant.
- Stir in curry powder, turmeric, cumin, coriander, cayenne pepper, and black pepper; cook for 1 minute, stirring constantly, to toast the spices.
- Add tomato paste and cook for another minute. Pour in chicken broth, coconut milk, red lentils, rice, and diced apple. Bring to a boil, then reduce heat and simmer, covered, for 30 minutes.
- Return the browned chicken to the pot. Continue to simmer for another 10-15 minutes, or until chicken is cooked through and lentils and rice are tender.
- Remove from heat, stir in lime juice. Taste and adjust seasonings as needed, adding more salt or spice if desired.
- Serve Mulligatawny hot, garnished with fresh chopped cilantro and a lime wedge.
