👨‍🍳 Instructions

  1. Rinse the white rice thoroughly. In a medium pot, combine the rinsed rice with 1.5 cups (360ml) of water and a pinch of salt; bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed and rice is cooked.
  2. While the rice cooks, heat vegetable oil in a separate large pan over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes.
  3. Add chopped tomato to the pan and cook for another 5 minutes, stirring occasionally, until it breaks down slightly. Stir in the peanut butter and 1/4 cup (60ml) of water until a smooth sauce forms; simmer for 2-3 minutes.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season the sauce with salt and pepper to taste.
