👨‍🍳 Instructions

  1. Nasi Padang is a traditional Indonesian meal served with various side dishes. This recipe combines Steamed White Rice, Beef Rendang, Sayur Nangka (Young Jackfruit Curry), and Sambal Ijo (Green Chili Sambal).
  2. To prepare Beef Rendang: Blend shallots, garlic, ginger, galangal, candlenuts, coriander, cumin, and turmeric with a little cooking oil to form a smooth paste. In a large pot, sauté the spice paste until fragrant.
  3. Add beef cubes, lemongrass, kaffir lime leaves, and bay leaves to the pot. Stir to coat the beef, then pour in coconut milk and tamarind paste. Bring to a simmer, then reduce heat and cook slowly for 3-4 hours, stirring occasionally, until the sauce thickens and the beef is very tender and dark brown.
  4. For Sayur Nangka: Prepare a similar spice paste with shallots, garlic, ginger, galangal, candlenuts, coriander, cumin, and turmeric. Sauté the paste in cooking oil until fragrant.
  5. Add young jackfruit pieces, lemongrass, kaffir lime leaves, and bay leaves to the pot. Stir to combine, then pour in coconut milk. Bring to a boil, then reduce heat and simmer for 45-60 minutes until the jackfruit is tender and the sauce has slightly thickened.
  6. For Sambal Ijo: Steam or boil green chillies, green tomatoes, shallots, and garlic until soft. Roughly pound them in a mortar and pestle or food processor, keeping some texture.
  7. Heat a small amount of cooking oil in a pan, then sauté the pounded mixture until fragrant, for about 5-7 minutes. Season with salt and a pinch of sugar to taste.
  8. Cook white rice according to package directions, typically by rinsing the rice thoroughly, then combining with water in a rice cooker or pot, and steaming until fluffy.
  9. To serve Nasi Padang, place a generous portion of steamed white rice on a plate. Arrange portions of Beef Rendang, Sayur Nangka, and Sambal Ijo around the rice.
