👨‍🍳 Instructions

  1. Prepare the fresh herbs and vegetables: finely slice or chop the shallots, lemongrass, ginger, kaffir lime leaves, long beans, cucumber, mint leaves, and Vietnamese coriander.
  2. Toast the dried shrimp in a dry pan until fragrant, then pound them into a coarse paste. Similarly, toast grated coconut (kerisik) until golden brown, then pound it into a fine paste.
  3. In a large bowl, combine the cooked white rice with all the finely chopped herbs and vegetables.
  4. Add the pounded dried shrimp, kerisik, sliced red chillies, and fresh lime juice to the rice mixture.
  5. Mix all ingredients thoroughly by hand, ensuring the herbs and seasonings are evenly distributed throughout the rice.
