👨🍳 Instructions
- Combine ground pork, 5g granulated sugar, 5g fish sauce, 3g minced garlic, 3g minced shallots, and 1g baking powder in a bowl. Knead vigorously for 5-7 minutes until the mixture is very sticky and smooth.
- Lightly grease your hands with 3g vegetable oil and form the pork mixture into small sausages or meatballs around bamboo skewers. Refrigerate for at least 30 minutes to firm up.
- Prepare the dipping sauce: In a small saucepan, combine 15g peanut butter, 10g hoisin sauce, 10g granulated sugar, 10g fish sauce, 20g water, 5g lime juice, 3g minced garlic, and 2g minced chili. Bring to a simmer over medium heat, stirring constantly until thickened. Set aside to cool.
- Preheat a grill or broiler to medium-high heat. Grill or broil the Nem Nuong for 10-15 minutes, turning occasionally, until golden brown and cooked through. Be careful not to burn the sugar in the marinade.
- Serve the grilled Nem Nuong hot with rice paper wrappers, lettuce, fresh mint, Thai basil, julienned cucumber, julienned carrots, and a generous drizzle of the creamy peanut dipping sauce. Garnish with crushed roasted peanuts.
