👨🍳 Instructions
- In a large pot, brown the beef chuck on all sides over medium-high heat. Drain excess fat if necessary.
- Add chopped onion, minced garlic, and diced bell pepper to the pot and sauté until softened, about 5-7 minutes.
- Pour enough water or beef broth to cover the meat and vegetables. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours.
- Add carrots, yucca, potatoes, and green plantain to the pot. Continue to simmer for 20 minutes.
- Finally, add chayote, corn on the cob, and sweet potato. Season with salt and pepper to taste. Simmer for another 15-20 minutes, or until all vegetables are tender.
- Garnish with fresh cilantro before serving. Serve hot, traditionally with white rice on the side.
