👨‍🍳 Instructions

  1. In a large pot, brown the beef chuck on all sides over medium-high heat. Drain excess fat if necessary.
  2. Add chopped onion, minced garlic, and diced bell pepper to the pot and sauté until softened, about 5-7 minutes.
  3. Pour enough water or beef broth to cover the meat and vegetables. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours.
  4. Add carrots, yucca, potatoes, and green plantain to the pot. Continue to simmer for 20 minutes.
  5. Finally, add chayote, corn on the cob, and sweet potato. Season with salt and pepper to taste. Simmer for another 15-20 minutes, or until all vegetables are tender.
  6. Garnish with fresh cilantro before serving. Serve hot, traditionally with white rice on the side.
