  1. Rinse the long-grain white rice thoroughly under cold water until the water runs clear; then place it in a saucepan with 2.5 times its volume of water.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all water is absorbed and rice is very soft.
  3. Once cooked, transfer the hot rice to a sturdy bowl and, using a wooden spoon or potato masher, mash it vigorously until it forms a smooth, sticky, and lump-free paste.
  4. Wet your hands slightly to prevent sticking, then take a portion of the mashed rice and form it into a smooth, compact ball or an oval shape.
