👨‍🍳 Instructions

  1. Finely dice the onion and mince the garlic. Heat olive oil in a deep skillet or pot over medium heat, then sauté the onion until softened and translucent, about 5-7 minutes.
  2. Add the minced garlic and cook for another minute until fragrant. Stir in the orzo pasta and toast for 1-2 minutes until slightly golden.
  3. Pour in the dry white wine, stirring until it has completely evaporated. Begin adding the warm vegetable broth, one ladleful at a time, stirring constantly.
  4. Continue adding broth and stirring until the orzo is al dente and has absorbed most of the liquid, about 15-20 minutes. Stir in the frozen peas for the last 5 minutes of cooking.
  5. Remove from heat, then stir in the butter and grated Parmesan cheese. Taste and adjust seasoning with salt and pepper as needed.
