👨‍🍳 Instructions

  1. For the Vleis (Stew): Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef stewing cubes on all sides; remove and set aside.
  2. Add chopped onion, carrots, and potatoes to the pot; sauté for about 5-7 minutes until softened. Stir in the diced tomatoes, paprika, chili powder, and black pepper.
  3. Return the browned beef to the pot, add beef broth and bay leaf, then bring to a simmer. Reduce heat to low, cover, and let it slow cook for 1.5 to 2 hours, or until the beef is very tender.
  4. For the Pap: In a separate medium saucepan, bring 180ml of water to a boil. Gradually whisk in the maize meal, stirring constantly to prevent lumps.
  5. Reduce heat to low, cover, and cook the pap for about 20-30 minutes, stirring occasionally, until it forms a thick, firm porridge. Stir in the butter until fully incorporated.
  6. Serve the tender beef stew (Vleis) generously alongside the hot, firm maize meal porridge (Pap). Garnish with fresh herbs if desired.
