- To prepare the dough, combine flour, egg, a pinch of salt, and gradually add water to form a firm, elastic dough. Knead for 10-15 minutes, then cover and let it rest for 30 minutes.
- For the filling, finely chop the onion and mix it with ground beef and pork. Season with salt and black pepper, adding a splash of water to keep the mixture juicy.
- Roll out small portions of rested dough very thinly. Use a round cutter or a glass to cut out circles about 5-7 cm in diameter.
- Place a small amount of filling in the center of each dough circle. Fold the dough in half to form a crescent, pressing the edges firmly to seal.
- Bring the two ends of the crescent together and pinch them to form a ring, creating the classic pelmeni shape. Repeat until all dough and filling are used.
- Bring a large pot of salted water to a rolling boil. Carefully add the pelmeni to the boiling water, stirring gently to prevent sticking.
- Cook for 5-7 minutes after they float to the surface, or until cooked through. Serve hot with sour cream, butter, or vinegar.
