👨‍🍳 Instructions

  1. Cook the penne pasta according to package directions in a large pot of salted boiling water until al dente. Reserve about 1/2 cup of pasta water, then drain the remaining water.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced sun-dried tomatoes to the skillet and cook for another 2-3 minutes, stirring occasionally. Season with salt and freshly ground black pepper to taste.
  4. Add the drained penne pasta to the skillet with the tomato mixture. Pour in a splash of the reserved pasta water (1/4 to 1/2 cup) to create a light sauce, tossing everything together.
  5. Remove from heat, stir in the fresh basil, and serve immediately. Garnish with grated Parmesan cheese if desired.
