- Penne pasta 80 g · 280 kcal
- Zucchini 150 g · 24 kcal

👨🍳 Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
- While the pasta cooks, prepare the zucchini. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet. Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp and lightly browned. Season with salt and freshly ground black pepper to taste.
- Drain the cooked penne pasta and add it directly to the skillet with the zucchini. Add about 1/4 cup of the reserved pasta water and toss everything together to create a light sauce, adding more water if needed.
- Remove from heat, stir in fresh chopped parsley, and serve immediately. Garnish each serving with grated Parmesan cheese and an extra drizzle of olive oil, if desired.
