👨‍🍳 Instructions

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.
  2. While the pasta cooks, prepare the zucchini. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the sliced zucchini to the skillet. Cook for 5-7 minutes, stirring occasionally, until the zucchini is tender-crisp and lightly browned. Season with salt and freshly ground black pepper to taste.
  4. Drain the cooked penne pasta and add it directly to the skillet with the zucchini. Add about 1/4 cup of the reserved pasta water and toss everything together to create a light sauce, adding more water if needed.
  5. Remove from heat, stir in fresh chopped parsley, and serve immediately. Garnish each serving with grated Parmesan cheese and an extra drizzle of olive oil, if desired.
