Pide (Turkish Flatbread with Minced Meat)

👨🍳 Instructions
- Prepare the dough: In a large bowl, dissolve yeast and a pinch of sugar in warm water, let it bloom for 5-10 minutes. Add flour, olive oil, and 1g of salt; mix and knead until a smooth, elastic dough forms. Cover and let it rise in a warm place for 60-90 minutes, until doubled in size.
- Prepare the filling: While the dough is rising, finely chop the onion, tomato, and green bell pepper. In a bowl, combine the ground beef with chopped onion, tomato, bell pepper, fresh parsley, 0.7g of salt, black pepper, paprika, and cumin. Mix well.
- Shape the Pide: Preheat oven to 200°C (400°F). Divide the risen dough into 4 equal portions. On a lightly floured surface, roll each portion into an oval shape, about 25-30 cm long.
- Fill and bake: Spread a quarter of the meat filling evenly over each oval dough, leaving a 1-2 cm border. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal. Place the shaped pide onto a baking sheet lined with parchment paper.
- Brush with egg wash: Whisk the egg yolk and lightly brush it over the dough edges of each pide for a golden finish. Bake for 15-20 minutes, or until the crust is golden brown and the meat filling is cooked through.
- Serve immediately: Once baked, remove from the oven and garnish with fresh parsley. Serve hot, optionally with a squeeze of lemon juice.
