Pineapple Chicken

👨🍳 Instructions
- Cut chicken breast into 1-inch pieces and dice bell pepper and onion. Mince garlic and grate ginger.
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and cornstarch with water to create the sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned on all sides and cooked through, then remove and set aside.
- Add bell pepper and onion to the same skillet and stir-fry for 3-4 minutes until slightly tender-crisp. Stir in minced garlic and grated ginger and cook for another minute until fragrant.
- Return chicken to the skillet, add pineapple chunks, and pour in the prepared sauce. Cook, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
- Serve immediately, optionally garnished with fresh cilantro or green onions, usually over rice.
