👨‍🍳 Instructions

  1. Cut chicken breast into 1-inch pieces and dice bell pepper and onion. Mince garlic and grate ginger.
  2. In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and cornstarch with water to create the sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned on all sides and cooked through, then remove and set aside.
  4. Add bell pepper and onion to the same skillet and stir-fry for 3-4 minutes until slightly tender-crisp. Stir in minced garlic and grated ginger and cook for another minute until fragrant.
  5. Return chicken to the skillet, add pineapple chunks, and pour in the prepared sauce. Cook, stirring constantly, until the sauce thickens and coats the chicken and vegetables.
