👨🍳 Instructions
- Soak dried chickpeas overnight. The next day, drain and rinse them. Cut the lamb into large pieces, removing excess fat and bones.
- In individual clay pots or a large pot, combine the lamb, soaked chickpeas, chopped onion, and saffron threads. Add enough water to cover.
- Bring to a boil, then reduce heat, skim off any foam, and simmer gently for 2-3 hours until the lamb is tender.
- Add the peeled chestnuts, whole potatoes, dried sour plums, turmeric, and black pepper. Continue to simmer until potatoes are cooked through and the broth has thickened slightly.
- Season generously with salt. Cook for another 10-15 minutes to allow flavors to meld.
- Serve hot, garnished with fresh chopped coriander.
