  1. Soak dried chickpeas overnight. The next day, drain and rinse them. Cut the lamb into large pieces, removing excess fat and bones.
  2. In individual clay pots or a large pot, combine the lamb, soaked chickpeas, chopped onion, and saffron threads. Add enough water to cover.
  3. Bring to a boil, then reduce heat, skim off any foam, and simmer gently for 2-3 hours until the lamb is tender.
  4. Add the peeled chestnuts, whole potatoes, dried sour plums, turmeric, and black pepper. Continue to simmer until potatoes are cooked through and the broth has thickened slightly.
  5. Season generously with salt. Cook for another 10-15 minutes to allow flavors to meld.
  6. Serve hot, garnished with fresh chopped coriander.
