👨‍🍳 Instructions

  1. Rinse the long-grain rice thoroughly under cold water until the water runs clear; then let it soak in fresh water while you prepare other ingredients.
  2. Heat the vegetable oil in a large heavy-bottomed pot or kazan over high heat. Add the chicken pieces and fry until deeply browned on all sides.
  3. Add the sliced onions to the pot and cook until softened and golden, then add the julienned carrots and sauté until slightly tender and bright orange.
  4. Stir in the cumin, coriander, and black pepper, cooking for one minute until fragrant. Add salt to taste.
  5. Drain the soaked rice and spread it evenly over the chicken and vegetables. Place whole garlic heads (unpeeled, with the top cut off) into the rice.
  6. Carefully pour hot water over the rice until it just covers the rice by about 1-2 cm, trying not to disturb the layers.
  7. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 40-45 minutes or until all water is absorbed and rice is tender.
  8. Turn off the heat and let the plov rest, covered, for at least 15-20 minutes before serving. Gently fluff and mix before serving.
