👨‍🍳 Instructions

  1. Prepare the marinade: In a blender, combine orange juice, lime juice, peeled garlic cloves, onion, olive oil, ground cumin, dried oregano, chili powder, salt, and black pepper. Blend until smooth.
  2. Place the whole chicken in a large resealable bag or a deep dish. Pour the marinade over the chicken, ensuring it is fully coated both inside and out. Seal the bag or cover the dish and refrigerate for at least 4 hours, or preferably overnight, turning occasionally.
  3. Preheat your oven to 200°C (390°F). Remove the chicken from the marinade and place it on a roasting rack in a roasting pan. Discard any remaining marinade.
  4. Roast the chicken for 1 hour to 1 hour 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh (without touching the bone) reads 74°C (165°F). The skin should be golden brown and crispy.
  5. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring a more tender and flavorful result. Serve hot.
