👨🍳 Instructions
- Pat chicken thighs dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat, then sear the chicken until deeply browned on all sides; remove chicken and set aside.
- Add chopped onion to the pot and sauté until softened, about 5-7 minutes. Stir in minced garlic, cinnamon, allspice, and black pepper, cooking for another minute until fragrant.
- Pour in pomegranate molasses and chicken broth, stirring to scrape up any browned bits from the bottom of the pot.
- Return the chicken to the pot, nestling it into the sauce. Bring to a simmer, then cover and transfer to a preheated oven at 180°C (350°F) for 45-50 minutes, or until chicken is tender and cooked through.
- Serve the Pomegranate Chicken hot, garnished with fresh pomegranate seeds and chopped parsley.
