👨‍🍳 Instructions

  1. Slice pork tenderloin into 1-inch thick medallions, season generously with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat, sear pork medallions for 2-3 minutes per side until golden brown, then remove and set aside on a plate.
  3. Add butter to the same skillet, then add sliced mushrooms and cook until softened and browned, stirring occasionally.
  4. Stir in minced garlic and cook for another minute until fragrant.
  5. Pour in chicken broth and heavy cream, bring to a simmer, scraping up any browned bits from the bottom of the pan.
