👨🍳 Instructions
- Slice pork tenderloin into 1-inch thick medallions, season generously with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat, sear pork medallions for 2-3 minutes per side until golden brown, then remove and set aside on a plate.
- Add butter to the same skillet, then add sliced mushrooms and cook until softened and browned, stirring occasionally.
- Stir in minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and heavy cream, bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Return the pork medallions to the skillet with the sauce, reduce heat to medium-low, and simmer for 5-7 minutes, or until pork is cooked through and sauce has thickened slightly.
