👨‍🍳 Instructions

  1. Rinse the pork ribs thoroughly, cut into individual pieces, and pat dry; you may blanch them briefly in boiling water to remove impurities, then rinse again.
  2. In a large pot, combine the ribs with enough fresh water to cover them completely; add a few black peppercorns, bay leaves, and the quartered onion.
  3. Bring to a boil, then reduce heat to low, skim off any foam, and simmer gently for 90 minutes; meanwhile, peel and chop potatoes and carrots into bite-sized pieces, and thinly slice celery.
  4. Add the chopped potatoes, carrots, celery, and minced garlic to the pot; season with salt to taste and continue to simmer for another 30-40 minutes until the vegetables are tender.
  5. Remove the bay leaves and any large pieces of onion; ladle the hot soup into bowls, garnish with fresh parsley, and serve immediately.
