  1. Pat pork dry with paper towels; season generously with salt and black pepper.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Sear pork in batches until browned on all sides, then remove to a plate.
  4. Add onions, carrots, and celery to the pot; cook until softened, about 5-7 minutes.
  5. Stir in minced garlic and tomato paste; cook for 1 minute until fragrant.
  6. Return pork to the pot, add potatoes, beef broth, bay leaves, and dried thyme.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until pork is fork-tender.
