👨🍳 Instructions
- Pat pork dry with paper towels; season generously with salt and black pepper.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Sear pork in batches until browned on all sides, then remove to a plate.
- Add onions, carrots, and celery to the pot; cook until softened, about 5-7 minutes.
- Stir in minced garlic and tomato paste; cook for 1 minute until fragrant.
- Return pork to the pot, add potatoes, beef broth, bay leaves, and dried thyme.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until pork is fork-tender.
- Remove bay leaves, taste and adjust seasoning if needed. Serve hot.
