👨‍🍳 Instructions

  1. Pat the pork tenderloin dry with paper towels. Season generously with salt and freshly ground black pepper on all sides.
  2. Heat olive oil in an oven-safe skillet (cast iron recommended) over medium-high heat until shimmering. Sear the pork tenderloin for 2-3 minutes per side until deeply golden brown all over.
  3. Reduce heat to medium, add minced garlic and fresh rosemary sprigs to the skillet, stirring for 30 seconds until fragrant.
  4. Transfer the skillet to a preheated oven at 200°C (400°F). Roast for 15-20 minutes, or until an internal thermometer reads 63°C (145°F) for medium-rare to 70°C (160°F) for medium.
  5. Remove from oven, transfer pork to a cutting board, and tent loosely with foil. Let rest for 5-10 minutes before slicing into medallions and serving immediately.
