👨🍳 Instructions
- Pat the pork tenderloin dry with paper towels. Season generously with salt and freshly ground black pepper on all sides.
- Heat olive oil in an oven-safe skillet (cast iron recommended) over medium-high heat until shimmering. Sear the pork tenderloin for 2-3 minutes per side until deeply golden brown all over.
- Reduce heat to medium, add minced garlic and fresh rosemary sprigs to the skillet, stirring for 30 seconds until fragrant.
- Transfer the skillet to a preheated oven at 200°C (400°F). Roast for 15-20 minutes, or until an internal thermometer reads 63°C (145°F) for medium-rare to 70°C (160°F) for medium.
- Remove from oven, transfer pork to a cutting board, and tent loosely with foil. Let rest for 5-10 minutes before slicing into medallions and serving immediately.
