👨🍳 Instructions
- Trim any silver skin or excess fat from the pork tenderloins; cut each tenderloin into 2-3 pieces to fit into your slow cooker.
- In a small bowl, combine brown sugar, smoked paprika, chili powder, ground cumin, dry mustard, salt, and black pepper to make the spice rub.
- Generously rub the spice mixture all over the pork tenderloin pieces.
- Place the sliced onion and minced garlic at the bottom of the slow cooker.
- Arrange the seasoned pork tenderloin pieces over the onion and garlic.
- Pour the chicken broth and apple cider vinegar over the pork.
- Cover the slow cooker and cook on low for 3 hours, or until the pork is very tender and easily shreds with a fork.
- Remove the pork from the slow cooker and shred it using two forks. Discard any remaining large pieces of fat.
- Return the shredded pork to the slow cooker and stir it into the cooking liquid, which should have reduced and thickened slightly, creating a flavorful sauce.
- Serve the pulled pork tenderloin warm on buns with coleslaw, or as a main dish with your favorite sides.
