👨‍🍳 Instructions

  1. Trim any silver skin or excess fat from the pork tenderloins; cut each tenderloin into 2-3 pieces to fit into your slow cooker.
  2. In a small bowl, combine brown sugar, smoked paprika, chili powder, ground cumin, dry mustard, salt, and black pepper to make the spice rub.
  3. Generously rub the spice mixture all over the pork tenderloin pieces.
  4. Place the sliced onion and minced garlic at the bottom of the slow cooker.
  5. Arrange the seasoned pork tenderloin pieces over the onion and garlic.
  6. Pour the chicken broth and apple cider vinegar over the pork.
  7. Cover the slow cooker and cook on low for 3 hours, or until the pork is very tender and easily shreds with a fork.
  8. Remove the pork from the slow cooker and shred it using two forks. Discard any remaining large pieces of fat.
  9. Return the shredded pork to the slow cooker and stir it into the cooking liquid, which should have reduced and thickened slightly, creating a flavorful sauce.
  10. Serve the pulled pork tenderloin warm on buns with coleslaw, or as a main dish with your favorite sides.
