  1. In a bowl, combine the pre-cooked white corn flour with water and a pinch of salt; knead until a smooth dough forms. Divide the dough into equal portions and shape them into thick, round patties about 2-3 cm thick.
  2. Heat a griddle or heavy-bottomed pan over medium heat. Cook the arepas for 7-10 minutes on each side, until golden brown and cooked through; they should sound hollow when tapped.
  3. While the arepas cook, prepare the filling: in a separate bowl, mash the ripe avocado. Add the shredded chicken, mayonnaise, and fresh lime juice; mix well and season with salt and pepper to taste.
